Ringkasan Kegiatan

As a high carbohydrate material, exotic tubers can be used as alternative foodstuffs or processed into a raw material for a variety of other food. However, the utilization of these tubers is still limited due to lack of information regarding cultivation technology and how to process it. Based on the potential of these tubers the development of exotic tuber cultivation and processing innovations will be made into products that can be utilized for food availability and as industrial raw materials. The purpose of this project is to develop the potential of exotic tubers in order to have high added value through processing into direct food or raw materials, so that the community is expected to be able to exploit the potential of exotic tubers obtained in the surrounding environment as an alternative food that has good characteristics in terms of nutrition and organoleptic properties.
