National milk production has decreased by an average of 1.03% per year during the 2012-2016 period (Outlook Dairy, 2016). However, the need of milk grows more than 4% per year (Ministry of Industry, 2016). One way to solve this problem is to provide animal feed in the form of protected-protein that can increase cow's milk production. In addition of using soybean, this study also uses okara, a derived product from soybeans, as a protein source for animal feed. In protected-protein production from soybean, one of the most effective and efficient method to reduce the anti-nutrition is heat treatment. Protected-protein must be treated at optimum temperature to produce protein that is not easily degraded but still can be absorbed. Tthis study aims to determine the effect of time, temperature, and heating method on the protein quantity and quality. This research consists of several stages, namely processing raw materials into protected proteins, samples preparation, and testing the quantity and quality of proteins.
